Japanese food is delicious, healthy and both its popularity and demand
are flourishing throughout the world. We have crafted a dry, white
wine, made entirely from native Japanese grapes and designed to
complement the experience of Japanese dining. This was achieved
through the Koshu Wine Project, an unprecedented collaboration of
renowned wine-makers, viticulturists, scientists, politicians and wine
industry leaders from Europe, the United States, Australia and Japan.
Our desire to make the perfect wine for Japanese cuisine started with Koshu, a grape varietal that has flourished in Japan for centuries. We submitted samples of Koshu to the University of California-Davis and their DNA analysis confirmed that Koshu grapes are indeed vitus vinifera the same varietal as Sauvignon Blanc and other grapes that produce world class wines.
The Koshu Wine Project was formed to draw on international talent and technical expertise because all Japanese wines to this point were made for domestic consumption and not of a standard to market internationally. There was also no precedent for growing Koshu grapes aside from traditional Japanese farming methods that focus on growing Koshu as table grapes, not for wine making. The project's success is due to the cooperation and fusion of knowledge between Japanese grape farmers and an international cast of specialists. Our wine is made by Denis Dubourdieu, a world renowned wine maker and professor of Oenology at the University of Bordeaux. Viticulturists from Australia's wine industry helped us plant the first large vineyards in Japan to employ the Vertical Shoot Position, a method that produces grapes ideal for wine. The Koshu Wine Project now has several vineyards throughout the agricultural heartland of Japan. As pioneers for this type of grape farming in Japan, the Koshu Wine Project is committed to systematically improving the production of Koshu wine grapes by establishing experimental vineyards in different climates and altitudes in Japan that employ instruments such as weather stations to monitor precipitation, humidity and other variables EXPLORE A KOSHU VINEYARD
The project has been met with the enthusiasm by Japanese government at the local and national levels. As a country with nearly no agricultural exports, and one that imports over 90% of total food consumed, the national government has been behind The Koshu Wine Project's effort to produce a high value-added agricultural export. The Japanese government is currently working with the EU to approve our Koshu wines for export to the European Union-a first for a Japanese wine. Politicians on a local level have welcomed the project's investment into rural economies and employment opportunities for their constituents.
