As an oenologist at the University of Bordeaux, Professor Denis Dubourdieu accepted the invitation of the Koshu Wine Project to travel to Japan with the mission of making a fine wine to match Japanese Cuisine.

Taking on this unprecedented task suited Professor Dubourdieu.
